Mid Week Chocolate

I know, I know------------ we just had chocolate overload last weekend. But I'm still craving chocolate and bet you are too!

Can I share a favorite recipe? Easy to make and delicious to eat----


Gooey Chocolate Sheet Cake:

2 cups flour
1 1/2 cups white sugar
1/2 cup packed brown sugar
pinch salt

Combine:
½ cup buttermilk
2 lg. eggs
1 tsp. cognac (you can substitute vanilla)
1 tsp. baking soda

Melt:
2 sticks butter & add
4 heaping Tbs. good quality cocoa

Gooey Frosting:
1 ¾ sticks real butter
4 heaping Tbs. good quality cocoa
6 tbs. half and half (or whole milk if you must)
1 tsp.cognac  (you can substitute vanilla)
1 pound powdered sugar
3/4 cup finely chopped pecans or nuts you like  (purely optional)

Preheat oven 350 degrees
Combine the dry's and the wets as per the recipe instructions.
 
Now bring 1 cup water to boil and add to the butter/cocoa mixture in the pan. Bubble for a quick minute and take off the heat.


Pour the chocolate mixture into the flour mixture, stir together for a moment to cool the chocolate mixture and then add the egg mixture.

This is a THIN cake. Pour the batter into 2 13x9 pans.......... or into a jelly roll pan with short sides.

Make the gooey frosting when the cake is about done baking. Melt the butter and  add cocoa and stir. Add in milk and cognac. Add powdered sugar and beat until smooth, add nuts if using.

When the cake comes out, pour the warm icing over the top, spread as little as possible so pour carefully!

So good it will hurt you. Really.
